While we don't go there as often as Montreal, we have been to Québec City often and recently enough to fill in our categories..

Fine dining: Le St-Amour

Toque logoApart from having great food and good service, Le Saint Amour is blessed with one of the most beautiful interiors I've ever seen. (You can take a virtual tour of it on their website.) So you get an instant happy feeling just being there.

Their menu includes both cold and warm foie gras, both very well done, if you like that sort of thing. They also have the usual gourmet assortment of meat and seafood dishes available (fine dining isn't as easy for vegetarians). But dessert is probably their main speciality. They have a very big dessert menu, with all kind mouth-watering options, from light sorbets to chocolate extravaganzas.

Other recommended places of this type in Where to Eat in Canada are l'Initiale and Lauré Raphael. Though we've been to l'Initiale, it's been too long to really comment on it. And we've never tried Lauré Raphael, though Jean's aunt and uncle really enjoyed their dinner there.

Good, less expensive: Le Crémaillère

This restaurant has all the makings of a fine dining establishment: Good rich food, excellent service, nice room, interesting wine list. They just happen to be a little cheaper than the big three listed above. So a very good choice if you want a nice night out in Québec City but don't want to fork out quite the amount that the above restaurants would require.

The menu changes on a seasonal basis.

Ethnic: Apsara

Sometimes you just get tired of all the rich French food, at which point it's nice to discover Apsara in old Québec. Though it is listed in Where to Eat in Canada, I didn't necessarily find it to be an outstanding Thai restaurant, but it was a perfectly fine meal, and we had no complaints about the service. The prices are also quite reasonable.
